Black-eyed bean salad

MATERIALS

  • Black-eyed beans
  • Carrot
  • Pepper
  • Tomatoes
  • Fresh onion
  • Baby rocket
  • Salt, pepper, apple cider vinegar, a little olive oil

IMPLEMENTATION

  • Boil the black-eyed beans (they don't need soaking they boil fairly quickly). We drain, chop the carrot and pepper, Add the cherry tomatoes, rocket and spring onion, seasoned.
