For the filling
Minced beef 300 gr.
Yellow rice 300 gr.
Olive oil 100-150 gr.

Turkey
Fresh or frozen turkey 3-4 kilograms
Prunes without pits 10-12 pcs
Dried apricots 10-12 pcs
Olive oil 2 tablespoons
Orange juice from 2 oranges
Non-stick paper 3 large pieces
Aluminum foil 3 large pieces
Instructions
Clean and wash the turkey carefully so as not to open its belly too much and let it drain. Finely chop the onion or coarsely chop it in a food processor, also chop the turkey giblets. Put the olive oil in a deep frying pan and saute the onion, the chopped offal and minced meat. We extinguish with the wine. Dissolve the chicken cube in one liter of water and after the alcohol has evaporated from the pan, pour half the stock inside. As soon as it boils, add the rice and season with salt and pepper. After it has absorbed the liquid, remove the pan from the heat, add the chestnuts and pine nuts, cinnamon and allspice (optionally). Season the turkey inside and out with salt and pepper, and fill the belly of the turkey with the mixture we made and sew it up. Brush the turkey with phytin. Open the sheets of non-stick paper and place the turkey on top, pour the plums and apricots around it and wrap well. We do the same with aluminum foil. Preheat the oven to 180 degrees and roast the turkey for 3 hours or put it in the oven at a low temperature from the evening and finish it in the morning. On 2 baking hours, open the aluminum foil and the non-stick paper and pour gradually (little by little) during the rest of the cooking season the turkey with the remaining chicken stock and orange juice. After it turns pink, take it out of the oven and put it on a plate. Open the belly and pull the stuffing out. We put the stock from the cube that we poured over the turkey and that is inside the non-stick paper into a saucepan and coagulate it together with the 1 tablespoon of flour (we want it to thicken like a sauce, so we monitor it to see if we need to add a little more water or flour). Serve piece of turkey and stuffing on the plates and pour over with our sauce.
